Garam Masala Dip – So easy!
Toast garam masala in a hot dry pan for a few seconds, just to wake it up. Add it to olive oil and lime juice, and sprinkle with a little salt. If you are using organic limes, you can throw in a little lime zest.
When mixture is cool, stir it into yogurt. Refrigerate dip until you are ready to serve it.
Making Plantain Fries – Also Easy!
To make plantain fries, cut green plantains in half, then slice off the peel with a sharp knife.
Cut each half lengthwise into evenly size strips to form fries.
In a pan heated with cooking oil, I really like coconut oil, fry plantain strips until they are golden brown. Place them on a rack or paper towels and salt them to taste.
Serve immediately with your garam masala dip. If you have vegan diners in the group, salsa and guacamole are also delicious with plantain fries.

- 1 t olive oil
