Summer STE(a)M camp students are excited to learn the science and art of creating mango caviar through basic spherification.

Students used mango juice, adding drops into a calcium bath. A delicate skin is created around each sphere, leaving the inside as a liquid. These spheres are fun to make and to eat.

Larger mango spheres can be created to mimic egg yolks.
Mango sphere over coconut agar white (yum!) pays homage to Rene Magritte’s Treachery of Images, and the yolk does burst, creating a sauce. This is not an egg.
